Star lineup of chefs for Columbia County fundraiser

Zak Pelaccio of Fish & Game restaurant in Hudson has assembled a remarkable group of celebrated American and Canadian chefs for a fundraiser called Play with Fire, scheduled for 3:30 p.m. until late on Sunday, Aug. 17, at the Fish & Game farm in Old Chatham. Among the big names are Sean Brock, the chef most associated with the culinary renaissance of Charleston, S.C.; April Bloomfield of The Spotted Pig and The Breslin in Manhattan; and Jamie Bissonnette, who in May won a  James Beard Award as best chef in the Northeast.

Pelaccio tells me each American chef will be paired with a Canadian counterpart to cook over wood fires set up at stations around the farm. There will also be dessert and cocktail stations, and live music will be provided by John Medeski, keyboardist of the jazz-funk trio Medeski Martin & Wood.
